Christmas Pudding Cupcakes


Ingredients:
150g Butter
150g Caster Sugar
175g Self-raising Flour
25g Cocoa Powder
3 Eggs

To Make:
Preheat oven to 180°C. Mix together the butter, caster sugar, flour and cocoa powder into a mixing bowl. Slowly add the beaten eggs to the mixture.



Once all the ingredients are completely mixed together, take a large spoon and equally divide the mixture into 12 cupcake cases. Bake for 12 - 15 mins until firm to touch. Remove from oven and leave to cool. 

To Decorate: 
To make the cupcakes look like Christmas puddings I mixed together ready to roll royal icing with green food colouring for the holly leafs and red food colouring for the berries.

Mince Pies

Ingredients:
225g Butter
350g Plain Flour
100g Golden Caster Sugar
1 Egg
Mincemeat
Icing Sugar

To Make:
To make the pastry, sieve the flour into a mixing bowl and rub in the butter making sure you hands are cold so you don't try to over work the mixture. Next add the golden caster sugar and a pinch of salt. Knead together till the pastry combines into a ball, no extra liquid is needed. Wrap the pastry in a piece of cling film and place in the fridge for 30 minutes.


Preheat oven to 200°C, this recipe should make 18 mince pies. Roll out the pastry and line each foil case. Spoon the mince meat mixture into the pies. For the lids I used a star shaped cutter and placed one on top of each pie pressing down each corner of the star. 



Beat the egg and brush on top of each mincemeat pie. Place in oven and cook for approximately 20 minutes until golden. Lightly dust with icing sugar to finish off.

Christmas Biscuits

Ingredients:
275g Plain Flour
1 tsp Baking Powder
100g Caster Sugar
75g Butter
1 Egg
2 tbsp Golden Syrup
1/2 tsp Vanilla Extract

To Make
Preheat oven to 170°C. Place flour, baking powder and caster sugar into  mixing bowl then add butter and rub together. Pour in the beaten egg, golden syrup and vanilla extract into mixture and knead until you have a ball of dough. 
Place dough in cling film and chill in fridge for 30 minutes.



Roll out the dough, given you a thickness of 5mm and use your cookie cutters to cut out the shapes you would like. Place onto a greased tray at bake for 12-15 minutes until golden brown.

Once golden place on to a cooling rack. For the decorating I used icing pens, sprinkles and I also melted chocolate but you can use whatever you like.

The Perfect Gift!?


Triple Chocolate Brownies 

Ingredients:
130g Brown Sugar
110g Caster Sugar
75g Cocoa Powder
75g Plain Flour
1/4 tsp Baking Powder
100g Milk Chocolate Chips
100g White Chocolate Chips
150g Melted Unsalted Butter
3 Eggs
1 tsp Vanilla Essence


To Gift



Layer all of the dry ingredients into a jar, this is the perfect gift for someone who loves to bake or just love brownies.

To Make
Preheat oven to 160°C, combine all the ingredients from the jar together into a mixing bowl and add the melted butter, eggs and vanilla extract. Beat together and pour the mixture into a lined grease proof paper baking tray. Cook for approximately 30-35 mins, serves 15.
